Dried wild pears

  • Makes: ± 200 g
  • Time: 30 min + 8–12 hrs drying
  • From: Wild pear

Ingredients

  • 1 kg wild pears
  • 1 litre water
  • juice of 1 lemon

Method

  1. Wash the pears, halve them and cut out the core and blossom end. Throw away any rotten parts. The skin can stay on.
  2. Mix the water and lemon juice and put the pear halves in for 3 minutes so they do not turn brown. Drain.
  3. Lay them cut side up on a rack, without overlapping.
  4. Dry them for 8–12 hours in an oven at 60–70 °C with the door slightly ajar, or in a dehydrator. Turn them over halfway.
  5. They are ready when they are leathery and pliable and no moisture comes out when you press them. Leave to cool completely.
  6. Put them in a jar and shake it daily for the first week. If condensation forms, dry the pears a little longer.

Storing: A year in a closed jar in a cool, dry, dark place. If they turn damp or mouldy, throw them away.
