Maple syrup

  • Makes: ± 200 ml from 10 litres of sap
  • Time: 4–6 hrs
  • From: Silver maple

Ingredients

  • 10 litres fresh maple sap

Method

  1. Strain the sap through a clean cloth.
  2. Boil it in a wide pan without a lid, preferably outdoors or under a powerful extractor hood. Top up with fresh sap as it reduces.
  3. When about half a litre is left, carry on over a lower heat in a smaller pan and stay with it: at the end it catches easily.
  4. The syrup is ready when it is slightly thick, at about 104 °C (4 °C above the boiling point of water).
  5. Strain the hot syrup through a fine cloth and pour it into hot, clean bottles. Seal at once.

Storing: Unopened, a year in a cool, dark place; once opened, in the fridge. Throw it away if it goes mouldy.
