Dried barberries

  • Makes: ± 120 g dried berries
  • Time: 20 min + 8–12 hrs drying
  • From: Barberry

Ingredients

  • 500 g ripe barberries
  • cold water for rinsing

Method

  1. Remove all stalks and leaves and discard any unripe, brown or mouldy berries.
  2. Rinse the berries briefly in cold water, drain them well and pat them dry.
  3. Spread them in a single layer on a rack or a baking tray lined with baking paper.
  4. Dry them for 8–12 hours in the oven on its lowest setting (60 °C at most) with the door ajar, or in a dehydrator. Shake now and then.
  5. The berries are ready when they are dark red and wrinkled, feel supple and no longer release any moisture when squeezed.
  6. Leave them to cool completely before putting them in a dry jar.

Storing: A year in a tightly closed jar in a dark, dry place. If you see mould or moisture in the jar, throw everything away.
