Crème de cassis

  • Makes: ± 1.2 litres
  • Time: 30 min + 6 weeks steeping
  • From: Blackcurrant

Ingredients

  • 500 g blackcurrants
  • 500 ml jenever, vodka or eau-de-vie (at least 35%)
  • 350 g sugar
  • 150 ml water
  • optionally 3 blackcurrant leaves

Method

  1. Strip the berries from their stalks, rinse them and crush them lightly in a large, clean jar; add the leaves if using.
  2. Pour in the spirit, close the jar and leave to steep in the dark for 6 weeks; shake weekly.
  3. Strain through a cloth, squeezing the berries well.
  4. Dissolve the sugar in the water over a low heat and leave the syrup to cool.
  5. Mix the syrup with the spirit, bottle and leave to rest for another month.

Storing: Cool and dark; best within a year, after which the colour fades. Lovely with white wine (kir) or over ice cream. Not for children.
