Redcurrant liqueur
- Makes: ± 700 ml
- Time: 20 min + 4 weeks steeping
- From: Redcurrant
Ingredients
- 400 g redcurrants
- 350 ml gin or vodka (± 40 %)
- 150 g caster sugar
- 100 ml water
- 1 strip of unwaxed lemon peel
Method
- Strip the redcurrants from their stalks, rinse them briefly and drain well. Crush them lightly with a fork.
- Bring the sugar and water to the boil until the sugar has dissolved and leave to cool.
- Put the redcurrants and lemon peel in a clean 1-litre jar. Pour over the sugar syrup and the spirit.
- Close the jar and shake well. Keep it somewhere cool and dark and shake it daily for the first week, then once a week.
- After 4 weeks, strain through a fine sieve or cloth without squeezing too hard.
- Pour the liqueur into clean bottles and leave to mature for another 2 weeks.
Storing: A year in a cool, dark place; shake before serving. It contains ± 20 % alcohol: drink in moderation, and not for children, during pregnancy or before driving.
