Stir-fried akebia skin with miso

Ingredients

  • the skins of 4 ripe akebia fruits
  • 1 tablespoon neutral oil
  • 1 tablespoon miso
  • 1 tablespoon mirin
  • 1 teaspoon sugar
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • 1 teaspoon toasted sesame seeds

Method

  1. Spoon the pulp out of the fruits (eat it fresh) and rinse the skins. Cut them lengthways into 1 cm strips.
  2. Boil the strips for 5 minutes in plenty of water, drain and pour away the cooking water. Soak them in cold water for 10 minutes: this removes some of the bitterness. Drain and pat dry.
  3. Stir the miso, mirin, sugar and water together into a little sauce.
  4. Heat the oil in a frying pan and fry the strips over a medium-high heat for 3 minutes until lightly coloured. Add the sauce and cook for another 1 to 2 minutes until glossy.
  5. Drizzle with the sesame oil and scatter over the sesame seeds. Serve as a side dish with rice: the strips are soft like aubergine and slightly bitter.

Storing: Eat it straight away; leftovers keep for a day in the fridge.
