Pink apple sauce with red chokeberry

Ingredients

  • 200 g red chokeberries
  • 1 kg apples
  • 150 ml water
  • 50 to 100 g sugar (to taste)
  • 1 pinch of cinnamon (optional)

Method

  1. Strip the berries from their stalks and rinse them. Simmer them gently with the water for 15 minutes with the lid on, until they burst and are soft.
  2. Rub them through a fine sieve over a bowl with the back of a ladle: the skins and pips stay behind. Do not use a stick blender.
  3. Peel and core the apples and cut them into pieces. Put them in the pan with the berry purée and simmer gently for 10 to 15 minutes until the apples fall apart, stirring now and then.
  4. Mash the sauce until smooth, or leave it chunky. Sweeten to taste and add cinnamon if you like.

Storing: Covered, 4 to 5 days in the fridge, or 3 months in the freezer. Lovely warm with pancakes, game or roast pork, or cold with yoghurt.
