Chokeberry and apple juice
- Makes: ± 1.2 litres
- Time: 45 min + 1 hr draining
- From: Purple chokeberry
Ingredients
- 1 kg chokeberries
- 1 kg sweet apples
- 500 ml water
- 100 to 150 g sugar (to taste)
Method
- Strip the berries from their stalks and rinse them. Wash the apples and cut them into chunks, skin and core included.
- Simmer the berries, apples and water gently for 20 minutes with the lid on, until everything is soft. Crush the fruit lightly with a masher, but do not blend it: the seeds should stay whole.
- Leave to drain for an hour through a cloth or a fine sieve over a bowl; do not squeeze too hard, so the juice stays clearer.
- Heat the juice with the sugar to just below boiling point, pour it hot into clean, hot bottles and seal at once. A steam juicer is quicker: then follow its instructions.
Storing: Six months unopened in a cool, dark place; once opened, a week in the fridge. Drink it neat or diluted with still or sparkling water.
