Liqueur · From Bladwijzer
Bilberry liqueur
- Makes: ± 1 litre
- Time: 20 min + 4 weeks steeping + 2 months maturing
- From: Bilberry
Ingredients
- 400 g wild bilberries
- 250 g sugar
- 1 litre vodka or grain gin (35–40 % alcohol)
- 1 cinnamon stick
- 1 strip of peel from an unwaxed lemon
Method
- Rinse the berries, let them dry thoroughly and crush them lightly with a fork.
- Put the berries, sugar, cinnamon and lemon peel in a large screw-top jar and pour the alcohol over.
- Close and shake until most of the sugar has dissolved. Keep the jar in the dark at room temperature for 4 weeks and shake it every few days.
- Strain through a fine sieve and then a coffee filter. This is slow, so give it time.
- Pour the liqueur into clean bottles with stoppers and leave it to mature for another 2 months in a cool, dark place.
Storing: One to two years in a cool, dark place. The liqueur contains about 25 % alcohol and is not for children.
