Blackberry and apple crumble
- Makes: 4–6 servings
- Time: 25 min + 40 min baking
- From: Bramble
Ingredients
- 400 g blackberries
- 3 sharp apples (± 500 g)
- 40 g caster sugar
- 1 teaspoon cinnamon
- juice of ½ lemon
- 150 g plain flour
- 100 g cold butter, diced
- 80 g soft brown sugar
- 40 g rolled oats
- 1 pinch of salt
Method
- Heat the oven to 180 °C (160 °C fan). Rinse the blackberries briefly and leave them to drain.
- Peel the apples and cut them into cubes. Mix them with the blackberries, sugar, cinnamon and lemon juice.
- Spoon the fruit into a baking dish of about 24 cm.
- Rub the flour, butter, brown sugar, oats and salt together with your fingertips to coarse crumbs. Do not overwork it, or the topping turns tough.
- Scatter the crumbs evenly over the fruit.
- Bake for 35–40 minutes, until the top is golden and the fruit is bubbling.
- Leave to rest for 10 minutes and serve warm with vanilla ice cream or custard.
Storing: Best on the day, warm. Leftovers keep covered in the fridge for 3 days; reheat in the oven for 10 minutes.
