Vinegar · From Bladwijzer

Large pink vinegar

  • Makes: ± 500 ml
  • Time: 15 min + 2 weeks infusing
  • From: Large pink

Ingredients

  • 2 large handfuls of petals from unsprayed large pinks (± 20 g)
  • 500 ml white wine vinegar or cider vinegar

Method

  1. Pull the petals out of the calyx, snip off the base and put them in a clean, dry glass jar or bottle.
  2. Pour in the vinegar until all the petals are covered and close with a lid that will not rust, or put a piece of baking paper underneath first.
  3. Leave to infuse for 2 weeks in a cool place out of the sun, shaking now and then: the vinegar turns a soft pink and takes on the scent.
  4. Strain the vinegar through a fine sieve or a coffee filter and pour it into a clean bottle.

Storing: Sealed, in a cool, dark place: a year. Lovely in a dressing for a summer salad with strawberries, cucumber or goat’s cheese.
