Dragonhead syrup

Ingredients

  • 2 good handfuls of flowering dragonhead tops (about 40 g)
  • 500 ml water
  • 500 g sugar
  • 1 unwaxed lemon

Method

  1. Rinse the tops briefly and leave to drain. Wash the lemon and cut it into slices.
  2. Bring the water and sugar to the boil, stirring until the sugar has dissolved.
  3. Take the pan off the heat, add the tops and lemon slices, cover and leave to steep overnight.
  4. Strain, bring the syrup back to the boil and pour it hot into clean bottles rinsed with boiling water. Seal straight away.
  5. Dilute 1 part syrup with 5 parts still or sparkling water for a refreshing lemonade.

Storing: A month in the fridge; use an opened bottle within two weeks.
