Dragonhead tea

Ingredients

  • 1 tablespoon fresh (or 1 teaspoon dried) dragonhead leaves, with a few flowers
  • 250 ml water
  • a spoonful of honey (optional)

Method

  1. Bring the water to the boil and let it cool for a minute.
  2. Lightly bruise the fresh leaves between your fingers and put them with the flowers in a teapot or cup.
  3. Pour over the water, cover and leave to steep for 5 to 7 minutes.
  4. Strain and drink warm with honey, or leave to cool and pour over ice cubes for iced tea.

Storing: Drink it fresh; once cooled, it keeps for a day in the fridge. Dried leaves keep for a year in a closed jar.
