Dried sage

  • Makes: ± 25 g dried leaves
  • Time: 15 min + 5–10 days drying
  • From: Common sage

Ingredients

  • 100 g fresh sage sprigs, picked on a dry morning
  • a wire rack or drying rack

Method

  1. Shake the sprigs well to remove insects and dust. Preferably do not wash them; if you have, pat them completely dry.
  2. Strip the leaves from the stalks and spread them in a single layer on the rack.
  3. Put the rack in a warm, airy, dark place and turn the leaves every day.
  4. After 5–10 days they are dry and brittle. If you are in a hurry, dry them for 2–4 hours in a dehydrator at 40 °C.
  5. Let them cool completely and put the whole leaves in a clean, dry jar.

Storing: Up to a year in a tightly closed jar, dry and dark. Rub the leaves fine only when you use them, so the flavour lasts best.
