Pasta with sage butter and Parmesan

Ingredients

  • 400 g pasta, such as tagliatelle or filled ravioli
  • 80 g butter
  • 15 fresh sage leaves
  • 40 g grated Parmesan
  • salt and freshly ground pepper
  • a few sage flowers to garnish (optional)

Method

  1. Cook the pasta in plenty of salted water, as the packet says. Keep a cup of the cooking water.
  2. Melt the butter in a large frying pan over medium heat.
  3. Add the sage leaves and fry them for 2–3 minutes, until crisp and the butter foams and turns light brown. Do not let it burn.
  4. Add the drained pasta to the pan with a splash of cooking water and toss for 1 minute.
  5. Season with salt and pepper and sprinkle over the Parmesan.
  6. Serve at once, with the sage flowers on top.

Storing: Best eaten straight away. One day in the fridge; reheat in a frying pan with a little water.
