Sage leaves in batter

Ingredients

  • 20 large fresh sage leaves with a bit of stalk
  • 100 g plain flour
  • 150 ml ice-cold sparkling water
  • 1 pinch of salt
  • ± 500 ml neutral oil for frying
  • flaky sea salt to sprinkle

Method

  1. Rinse the leaves briefly and pat them completely dry.
  2. Mix the flour, salt and sparkling water to a smooth, fairly thin batter. Do not stir for too long.
  3. Heat the oil in a small, deep pan to ± 175 °C: a cube of bread should turn golden in 30–40 seconds. Never leave the pan unattended.
  4. Hold the leaves by the stalk and dip them in the batter, let the excess drip off and fry 3–4 at a time for 1 minute, until pale golden.
  5. Drain on kitchen paper and sprinkle at once with flaky salt.

Storing: Eat straight away, as a nibble with drinks: they soon go soft.
