Syrup · From Bladwijzer
Elderflower cordial
- Makes: ± 1.5 litres
- Time: 30 min + 24 hrs steeping
- From: Elder
Ingredients
- 20 elderflower heads
- 1 litre water
- 1 kg sugar
- 2 unwaxed lemons
- 20 g citric acid (optional, for a fresher taste and longer keeping)
Method
- Shake the flower heads and snip off as much of the thick green stalk as you can.
- Bring the water and sugar to the boil until the sugar has dissolved, then leave to cool until lukewarm.
- Slice the lemons. Put the flowers and lemon in a large bowl or jar, add the citric acid and pour the syrup over.
- Cover with a cloth and leave to steep for 24 to 48 hours in a cool place, stirring a few times.
- Strain through a fine cloth, squeezing the flowers.
- Bring the cordial briefly to the boil and pour it hot into clean, sterilised bottles. Seal at once.
Storing: Unopened, a year in a cool, dark place; once opened, in the fridge. Dilute 1 part cordial with 5 to 8 parts still or sparkling water.
