Panna cotta with silver fir tips
- Makes: 4 small glasses
- Time: 20 min + 30 min infusing + 4 hrs setting
- From: European silver fir
Ingredients
- 20 g young silver fir tips
- 400 ml double cream
- 100 ml whole milk
- 60 g sugar
- 3 leaves of gelatine
- fresh raspberries or strawberries, to serve
Method
- Soak the gelatine leaves in cold water for 5 minutes.
- Pick the light green tips of a silver fir you can identify with certainty (never yew). Remove the brown scales and chop the tips finely.
- Heat the cream, milk, sugar and tips to just below boiling point. Take the pan off the heat, cover and leave to infuse for 30 minutes.
- Strain the cream, pressing the tips. Heat the cream again until it steams, without boiling.
- Squeeze out the gelatine and stir it into the warm cream until completely dissolved.
- Divide between 4 small glasses, leave to cool and chill for at least 4 hours. Serve with fresh red fruit.
Storing: 2 days in the fridge, covered.
