Fir-tip liqueur
- Makes: ± 0.7 litre
- Time: 20 min + 6 weeks
- From: European silver fir
Ingredients
- 100 g young silver-fir shoots
- 500 ml gin, vodka or brandy (± 40%)
- 200 g sugar
- 150 ml water
Method
- Rinse the shoots briefly, pat dry and put them in a clean glass jar.
- Pour over the alcohol, close and leave to steep for 4 weeks at room temperature, out of direct sun. Shake now and then.
- Strain through a coffee filter.
- Boil the water and sugar into a clear syrup and leave to cool.
- Mix the syrup with the infusion, bottle it and leave to rest for at least another 2 weeks.
Storing: Keeps for years in a cool, dark place; the colour turns browner and the flavour mellower.
