Lime blossom honey

  • Makes: ± 300 g
  • Time: 10 min + 2–3 weeks
  • From: Common lime

Ingredients

  • 10 g dried lime blossom
  • 300 g runny honey
  • 1 clean, dry jar of 350 ml

Method

  1. Use only completely dry blossom: moisture makes the honey ferment. Crumble it lightly.
  2. Warm the honey in a bain-marie until hand-warm (40 °C at most).
  3. Stir in the blossom.
  4. Spoon everything into the jar and close.
  5. Leave for 2–3 weeks at room temperature, in the dark, turning the jar over daily.
  6. Strain the honey through a coarse sieve if you like, or leave the blossom in.

Storing: Six months, cool and dark. Use a clean, dry spoon.
