Syrup · From Bladwijzer

Lime blossom cordial

  • Makes: ± 800 ml
  • Time: 30 min + 24 hrs steeping
  • From: Common lime

Ingredients

  • 50 g fresh lime blossom (± 3 large handfuls)
  • 500 ml water
  • 500 g sugar
  • 1 unwaxed lemon, sliced
  • 5 g citric acid (optional, for a fresher taste and longer keeping)

Method

  1. Shake the blossom and remove leaves and brown flowers.
  2. Bring the water and sugar to the boil until the sugar has dissolved and leave to cool for 10 minutes.
  3. Put the blossom and lemon slices in a large jar or bowl, add the citric acid if using and pour the syrup over. Stir briefly.
  4. Cover and leave to steep for 24 hours in a cool place, stirring now and then.
  5. Strain through a fine cloth, squeezing the blossom.
  6. Bring the cordial briefly to the boil, pour it hot into clean, sterilised bottles and seal at once.

Storing: Unopened, a year in a cool, dark place; once opened, in the fridge. Dilute 1 part cordial with 6 parts still or sparkling water.
