Caramelised black walnuts

Ingredients

  • 100 g shelled black walnuts
  • 50 g sugar
  • 1 tablespoon water
  • 1 knob of butter
  • 1 pinch of sea salt

Method

  1. Have a sheet of baking paper ready.
  2. Heat the sugar with the water in a frying pan over a medium heat, without stirring, until it melts and turns light golden. Swirl the pan now and then.
  3. Add the butter and nuts and stir for 1 to 2 minutes until every nut is coated in caramel. Take care: hot caramel causes nasty burns.
  4. Tip the nuts onto the paper, separate them with two forks and sprinkle with a little sea salt. Leave to cool until hard and crunchy.

Storing: A week or two in a well-closed jar. Lovely over a salad of pear and blue cheese, over ice cream or just as they are.
