Cherry plum liqueur

  • Makes: ± 1 litre
  • Time: 30 min + 6 weeks steeping
  • From: Cherry plum

Ingredients

  • 500 g ripe cherry plums
  • 700 ml vodka or jenever of 40 %
  • 250 g sugar
  • 1 cinnamon stick

Method

  1. Wash the cherry plums, dry them and cut them in half. Remove the stones without cracking them.
  2. Put the fruit with the sugar and cinnamon stick in a clean 1.5-litre jar and pour in the alcohol until everything is covered. Close the jar.
  3. Leave to steep for 6 weeks in a dark place at room temperature. Shake every few days until the sugar has dissolved.
  4. Strain through a fine cloth or a coffee filter, pressing the fruit lightly.
  5. Pour the liqueur into clean bottles and leave to mature for another 4 weeks before serving.

Storing: A year or longer in a cool, dark place. The liqueur contains about 25 % alcohol: enjoy in moderation.
