Jam · From Bladwijzer
Juneberry jam
- Makes: ± 3 jars
- Time: 30 min
- From: Snowy mespilus
Ingredients
- 1 kg ripe berries
- juice of 1 lemon
- 500 g gelling sugar 2:1
Method
- Rinse the berries and strip them from their stalks.
- Crush them roughly and mix with the lemon juice and gelling sugar; the lemon adds freshness and helps the set.
- Bring to the boil, stirring, and keep at a rolling boil for 4 minutes.
- Do the cold-plate test, fill clean, hot jars with the hot jam and close at once.
Storing: Unopened, a year in a cool, dark place; once opened, keep in the fridge.
