Dried juneberries
- Makes: ± 150 g
- Time: 15 min + 8–12 hours drying
- From: Snowy mespilus
Ingredients
- 500 g ripe berries
Method
- Rinse the berries, remove the stalks and pat them thoroughly dry.
- Dip them in boiling water for 30 seconds: the skins split and they dry faster.
- Spread them out on a baking tray lined with baking paper or on dehydrator racks.
- Dry them for 8 to 12 hours at 50–60 °C, with the oven door ajar, until leathery like raisins.
- Leave to cool and put them in a jar. Check during the first few days that no condensation forms; if it does, dry them a little longer.
Storing: Dry and dark in a closed jar: several months. Lovely in muesli, cake or scones.
