Hazelnut liqueur

  • Makes: ± 800 ml
  • Time: 30 min + 4 weeks steeping
  • From: Filbert

Ingredients

  • 250 g roasted, shelled hazelnuts
  • 500 ml vodka or jenever of 40 %
  • 200 g sugar
  • 200 ml water
  • 1 vanilla pod

Method

  1. Chop the hazelnuts roughly and put them in a clean 1-litre jar with the split vanilla pod.
  2. Pour in the alcohol until everything is covered, close the jar and leave it to steep in a dark place for 4 weeks. Shake it once a week.
  3. Strain through a fine cloth or a coffee filter. This takes a while.
  4. Boil the water and sugar for 2–3 minutes until the sugar has dissolved and leave to cool completely.
  5. Mix the strained alcohol with the cold syrup, taste and add a little more syrup if you like it sweeter.
  6. Pour into clean bottles and leave to mature for another 2 weeks before serving.

Storing: A year or longer in a cool, dark place. Shake before use, as a little sediment may form. The liqueur contains about 20–25 % alcohol: enjoy in moderation.
