Tart Oregon grape sauce for game and poultry

Ingredients

  • 400 g ripe Oregon grape berries
  • 1 shallot, finely chopped
  • 1 tbsp butter
  • 100 ml red wine (or apple juice)
  • 80 g sugar or honey
  • 1 sprig of thyme
  • 1 tbsp red wine vinegar
  • salt and pepper

Method

  1. Pick the berries off the clusters, remove stalks and unripe berries and rinse them.
  2. Soften the shallot in the butter for 3 minutes in a small pan, without letting it colour.
  3. Add the berries, wine, sugar and thyme. Simmer for 15 minutes, until the berries burst and the juice thickens slightly.
  4. Remove the thyme. Rub the sauce through a sieve with a spoon into a clean pan, so the seeds and skins stay behind.
  5. Add the vinegar and reduce for another 5 minutes, until the sauce is lightly thickened.
  6. Season with salt and pepper. Serve warm or cold with game, duck, turkey or cheese.

Storing: 10 days in the fridge in a closed jar, or up to 6 months in the freezer.
