Syrup · From Bladwijzer
Mint cordial
- Makes: ± 1 litre
- Time: 20 min + overnight steeping
- From: Spearmint
Ingredients
- 100 g spearmint (leaves and soft tips)
- 750 ml water
- 750 g sugar
- juice of 1 lemon
Method
- Bring the water and sugar to the boil, stirring until the sugar has dissolved.
- Take the pan off the heat, add the mint and lemon juice and push the leaves under.
- Cover and leave to steep overnight in a cool place.
- Strain through a cloth, bring the cordial back to the boil and pour it, boiling hot, into clean, hot bottles. Seal at once.
Storing: Unopened, six months in a cool, dark place; once opened, a month in the fridge. Dilute 1 to 6 with still or sparkling water. The cordial is light brown, not green: that is normal without colouring.
