Olive-leaf tea

Ingredients

  • 1 teaspoon dried, crumbled olive leaves (or 4–5 fresh leaves)
  • 250 ml boiling water
  • a slice of lemon or a little honey, if you like

Method

  1. Put the leaves in a teapot or tea infuser.
  2. Pour the water over and leave to steep for 5 to 10 minutes.
  3. Strain. The tea is slightly bitter; a little honey or lemon softens it.

Storing: Dry the leaves on a rack in the shade and keep them in a closed jar for up to a year.
