Arctic raspberry and raspberry jam

Ingredients

  • 150 g Arctic raspberries, fresh or collected in the freezer
  • 150 g raspberries
  • 150 g jam sugar (2:1)
  • 1 teaspoon lemon juice

Method

  1. Let frozen fruits thaw and put them in a pan with the raspberries. Crush everything roughly with a fork or masher.
  2. Stir in the jam sugar and lemon juice and bring to the boil, stirring all the time.
  3. Boil hard for 4 minutes, or as stated on the packet, and do the wrinkle test: a drop on a cold saucer should wrinkle after a minute when you push it with your finger.
  4. Pour the hot jam into clean, hot jars, seal at once and turn them upside down for 5 minutes.

Storing: A year unopened in a cool, dark place; once opened, 3 weeks in the fridge.
