Arctic raspberry liqueur

Ingredients

  • 150 g Arctic raspberries, fresh or frozen
  • 350 ml vodka (37.5–40%)
  • 100 g sugar
  • 75 ml water

Method

  1. Put the fruits in a clean glass jar and crush them lightly with a fork.
  2. Pour the vodka over them, close the jar and leave to steep for 3 to 4 weeks in a dark place at room temperature; shake now and then.
  3. Strain the liqueur through a fine sieve lined with a cloth or a coffee filter; do not press the fruits, so it stays clear.
  4. Heat the water with the sugar until dissolved, leave to cool and mix the syrup with the strained vodka. Pour into a clean bottle and leave to rest for another 2 weeks.

Storing: A year in a cool, dark place; the colour fades a little, but the fragrance remains. Not for children.
