Clary sage fritters
- Makes: 4 people as a snack
- Time: 30 min
- From: Clary sage
Ingredients
- 12 young clary sage leaves
- 100 g plain flour
- 1 egg
- 150 ml ice-cold sparkling water
- a pinch of salt
- sunflower oil for frying
- 1 lemon, cut into wedges
Method
- Rinse the leaves, pat them dry and snip off the thick stalk.
- Whisk the flour, egg, salt and sparkling water into a smooth batter; a few lumps do not matter.
- Heat a 2 cm layer of oil in a deep pan to 175 °C: a drop of batter will sizzle at once.
- Dip the leaves one by one in the batter, let the excess drip off and fry them two at a time for 1 to 2 minutes per side until golden.
- Drain on kitchen paper and serve warm, with a pinch of salt and lemon, or a little honey.
Storing: Eat straight away: they soon go limp. Never leave hot oil unattended.
