Vinegar · From Bladwijzer

Savory herb vinegar

  • Makes: ± 500 ml
  • Time: 10 min + 3 weeks steeping
  • From: Summer savory

Ingredients

  • 5 sprigs summer savory
  • 1 garlic clove, halved
  • 1 teaspoon peppercorns
  • 500 ml white wine vinegar

Method

  1. Rinse the savory and let it dry completely: water makes the vinegar cloudy.
  2. Put the herbs, garlic and pepper in a clean bottle and pour in the vinegar so that everything is covered.
  3. Leave to steep for 3 weeks in a cool, dark place.
  4. Strain the vinegar into a clean bottle, with a fresh sprig for decoration if you like.

Storing: A year in a cool, dark place. Lovely in a dressing for bean or potato salad.
