Syrup · From Bladwijzer
Japanese quince cordial
- Makes: ± 600 ml
- Time: 40 min + 1 day steeping
- From: Flowering quince
Ingredients
- 500 g Japanese quince fruits
- 400 g sugar
- 300 ml water
Method
- Remove the stalks, flower remnants, cores and pips and coarsely grate the fruits with the skin on, or chop them finely in a food processor.
- Mix the grated fruit with the sugar in a bowl and leave covered for 24 hours. Stir now and then.
- Add the water, bring to the boil and simmer for 15 minutes.
- Pour through a fine sieve or cloth and leave to drain; do not squeeze too hard, so the cordial stays clear.
- Bring the cordial to the boil again and pour it hot into clean, sterilised bottles. Seal at once.
Storing: Unopened, six months in a cool, dark place; once opened, in the fridge and drink within a few weeks. Dilute 1 part cordial with 5 parts water or use it in a hot drink.
