Heather flower syrup

  • Makes: ± 500 ml
  • Time: 20 min + 12 hrs steeping
  • From: Heather

Ingredients

  • 2 large handfuls (± 40 g) flowering heather tops
  • 500 ml water
  • 500 g sugar
  • juice of 1 lemon

Method

  1. Pick the flowering tops only in your own garden or with the owner’s permission: picking is not allowed in nature reserves and protected heathland. Shake them well to remove insects and rinse briefly.
  2. Bring the water to the boil, pour it over the heather in a bowl, cover and leave to steep overnight (12 hours).
  3. Strain the liquid and measure out 500 ml, topping up with water if needed. Bring to the boil with the sugar and simmer for 5 minutes.
  4. Take off the heat and stir in the lemon juice.
  5. Pour boiling hot into clean, sterilised bottles and seal at once.

Storing: Unopened, 6 months in a cool, dark place; once opened, in the fridge and used within 4 weeks. Lovely in tea, over pancakes and yoghurt, or diluted with sparkling water.
