Vinegar · From Bladwijzer
Mexican tarragon vinegar
- Makes: ± 500 ml
- Time: 10 min + 2 weeks steeping
- From: Mexican tarragon
Ingredients
- 4 sprigs of Mexican tarragon, about 15 cm
- 500 ml white wine vinegar
- a clean bottle with a cork or screw cap
Method
- Pick the sprigs on a dry morning, rinse briefly and pat them completely dry.
- Put them in the bottle and pour over the vinegar: the sprigs must be fully covered.
- Close the bottle and leave to steep for 2 weeks somewhere cool and dark. Shake now and then.
- Taste: once the flavour is strong enough, strain the vinegar into another clean bottle and seal well. Use it in a vinaigrette or a béarnaise sauce.
Storing: Keeps for a year somewhere cool and dark. Remove the sprigs after steeping: leaves sticking out of the vinegar can go mouldy.
