Costmary cake
- Makes: 1 loaf cake (± 10 slices)
- Time: 1 hr 15
- From: Costmary
Ingredients
- 6 to 8 large fresh costmary leaves
- 200 g soft butter
- 200 g caster sugar
- 4 eggs
- 200 g self-raising flour
- a pinch of salt
- the grated zest of 1 unwaxed lemon
Method
- Preheat the oven to 170 °C. Grease a loaf tin of about 25 cm and line the base with baking paper.
- Lay the costmary leaves side by side on the base of the tin.
- Beat the butter and sugar until creamy. Beat in the eggs one at a time.
- Fold in the flour, salt and lemon zest to a smooth batter and spoon it carefully over the leaves.
- Bake for 50 to 60 minutes until a skewer comes out clean. Leave to cool for 10 minutes, turn out and peel off the leaves: their scent is now in the cake.
Storing: 4 to 5 days in an airtight tin. It can also be frozen in slices.
