White-pine tea

Ingredients

  • 2 handfuls Weymouth pine needles (± 30 g)
  • 1 litre water
  • a slice of lemon or a little honey, if you like

Method

  1. Rinse the needles and snip them into 1–2 cm pieces to release the aroma.
  2. Bring the water to the boil, take it off the heat and let it cool for a minute.
  3. Add the needles, cover and leave to steep for 15 minutes.
  4. Strain and drink hot, or leave to cool and chill for a refreshing iced tea.

Storing: Keeps for 2 days in the fridge. Dried needles keep for a few months in a closed jar.
