Dried chokeberries

Ingredients

  • 1 kg black chokeberries
  • 1 litre boiling water for blanching

Method

  1. Rinse the berries and remove any stalks and leaves.
  2. Dip the berries in boiling water for 30 seconds, drain and pat dry: this splits the skins so they dry faster.
  3. Spread them in a single layer on the trays of a dehydrator, or on an oven rack lined with baking paper.
  4. Dry for 8–12 hours at 60–70 °C (in an ordinary oven: lowest setting, door slightly open), turning them now and then.
  5. They are done when they are leathery and no moisture comes out when you cut one open.
  6. Leave to cool and put them in a glass jar. Shake it daily for the first few days: if condensation forms, dry them a little longer.

Storing: A year in a tightly closed jar, dry and dark. Good in muesli, biscuits or tea.
